Cavan Showcases the Animals of South Louisiana's Wetlands with Vanishing Paradise Supper

Executive chef Nathan Richard will Partner with Mudbug Brewery and the National Wildlife Federation for Charity Dinner

NEW ORLEANS (August 28, 2017) - On Wednesday, September 13 at 7:00 P.M., Cavan will partner with Mudbug Brewery, to host a dinner to celebrate the bounty of Southeast Louisiana's estuaries. A portion of the proceeds of the Vanishing Paradise Supper will benefit Vanishing Paradise, a program of the National Wildlife Federation.

The dinner will feature a carefully-crafted four-course themed menu by executive chef Nathan Richard, and pairings by Mudbug Brewery out of Thibodaux. The menu was inspired to create dishes that highlight the different animals that are destroying the wetlands.

Chef Richard, is approaching this dinner with hopes that diners will not only enjoy a delicious meal, but leave with further knowledge on the issue at hand. "We are so excited for guests to take a step out of their comfort zones for a good cause with this meal." He also notes, "Throughout the dinner, the National Wildlife Federation will share a brief presentation about the vanishing wetlands, and later will treat guests to some fun trivia questions...with prizes!"

In addition to offering pairings for the dinner, Mudbug Brewery created a limited-edition specialty beer for the occasion. Brance Lloyd, President/Owner of Mudbug Brewery is very excited at the prospect of collaborating with the Cavan team for this cause. "This Vanishing Paradise Supper at Cavan will be a truly unique experience. Guests will simultaneously enjoy thoughtfully curated wild game dishes that pair with hand-crafted beer, brewed in the same region that these wild game animals were harvested," Says Lloyd. "I am honored that Mudbug Brewery will be helping to fight for our wetlands, the very wetlands that we are losing each and every day in our home of South Louisiana."

Vanishing Paradise advocates for restoration of the Mississippi River Delta among sportsmen and women across the country. The program partners with businesses, organizations and individuals nationwide to restore Louisiana's waterfowl and fishing habitat by reconnecting the Mississippi River with its wetlands.

The menu for the Vanishing Paradise Supper, with beverage pairings, is as follows:

• Carp and Chips | Malt Vinegar Aioli
Grapefruit Radler with White Boot Louisiana Blonde Ale

• Charcuterie Selection | Alligator, Garfish, etc.
Black Lager Cask

• Turtle "Egg" Carbonara | Garfish Tasso
White Boot Louisiana Blonde Ale

• Chicken Fried Rabbit | White Beans, Duck Bacon
Pelican Pilsner German Style Pilsner

• Roulade of Alligator | Griddle Gravy, Grits
Oktoberfest

• Floating Isle | Bananas Foster
Café Au Lait Stout Coffee Milk Stout

The cost of the dinner is $65, with an additional $25 for beverage pairings. Guests can make reservations with the Cavan host staff over the phone (504-509-7655) or via email (roger@cavannola.com). Credit card information will be collected at the time of reservation to hold seats.
