Semolina Celebrates the Revival of Crawfish Season Starting February 22

New Orleans, LA (February 22, 2012) - The Crawfish Revival, which has become a popular tradition at Semolina, is coming back for another year starting February 22. The restaurant is celebrating its return with three appetizers and five tantalizing entrees featuring Louisiana crawfish for a limited time.

"We are thrilled to announce our 2012 Crawfish menu," said Nancy Jeansonne, director of marketing for Semolina. "Just because Carnival season is over, doesn't mean New Orleans doesn't have a reason to celebrate. The kick-off of crawfish season has become a community celebration that we look forward to every year. To make it more exciting, crawfish farmers are predicting a great season."

To start the meal off right, patrons have the option of choosing from three crawfish inspired appetizers, including the creamy Corn and Crawfish Bisque and Semolina's original Crawfish Bread brushed with garlic butter and loaded with Louisiana crawfish tails and green onions in a creamy sauce with melted Fontina and Provolone cheeses. The classic creole Crawfish and Eggplant Napoleon with Parmesan crusted eggplant medallions, melted smoked Gouda cheese, diced tasso and Louisiana crawfish topped with a spicy cream sauce is also available.

For the main course, Semolina is offering patrons five enticing crawfish-filled dishes, including two Louisiana classics - a Crawfish Etouffee Pasta sautéed in a creole butter and tossed with penne pasta and succulent Crawfish Cakes over Pasta with a spiced cream sauce. Other entrees featured are the Crawfish Roban with Louisiana crawfish tails sautéed in a rich, spicy cream sauce tossed with pasta and garnished with green onions; the Wok Seared Crawfish Sesame Stir Fry topped with sesame seeds and served with soy and sriracha sauce on the side; and loaded Crawfish Enchiladas topped with a spicy enchilada sauce and baked with roasted corn and a blend of Cheddar and Provolone cheeses.
