Bourbon Orleans Hotel's Roux on Orleans Restaurant Names New Chef and launches New Menu

Chef Joey WellsNEW ORLEANS March 5, 2013 - The Bourbon Orleans Hotel‘s signature restaurant, Roux on Orleans, has announced the appointment of a new Chef, and the creation of a new menu for nightly  dinners served at the sidewalk side restaurant in the Bourbon Orleans Hotel in the very heart of the French Quarter just behind Saint Louis Cathedral on Orleans Street.

General Manager Mark Wilson announced this week the appointment of Chef Joey L. Wells as Executive Chef of the hotel.   Chef Wells has been creating his delicious southern dishes in kitchens throughout Louisiana and Texas since 1999 when he completed his culinary education with Scalfani's cooking school.

After graduating from Alcee Fortier High School in New Orleans, Wells joined the Air Force. He enjoyed a lengthy career in law enforcement however; he always enjoyed spending his spare time in the kitchen.

His passion led Chef Wells to move into the kitchen full time.  Wells loves working with Louisiana seafood.   His specialty is a combination of catfish, shrimp and grits.

Chef Wells says that when he is working in the kitchen it is a feeling like no other, he feels free. He enjoys the camaraderie of working with his staff, where they not only cook, but share a good laugh and often even sing together behind the stove.

Chef Wells has taken his passion for Louisiana Seafood and created a new menu for Roux that is available now on a nightly basis.     Samples of his work include a Barbeque Shrimp appetizer with a house made Abita Beer barbeque sauce, and his signature Catfish and Shrimp grits.  Grits are served with Cheddar cheese creamily melted in, the shrimp are lightly blackened, and all are drenched in Wells version of a spicy etouffee sauce.  For the more traditional minded diner, Chef Wells menu also offers a beautifully served "Redfish Couvillon"   -   a wonderful creole dish served with corn maque choux.
