Centerplate's Louisiana Crawfish Ragout and Grits

Grits:

Ingredients:
• 1 Table spoon Sea Salt
• 3 Tablespoons Creamery Butter, Unsalted
• 1 Cup Local Stone Ground Grits
• ½ Cup Mascarpone Cheese
• ½ Cup Sharp Yellow Cheddar Cheese

Method of Preparation:
In medium pan bring 4 cups of water to boil, add salt and stir in grits keep stirring reduce heat to medium cook for about 20 min or tender. Fold in Mascarpone and Butter. Pour in oven container and top with cheddar cheese bake for about 10 min at 350 degrees.

Crawfish Ragout:

Ingredients:
• 2 Tablespoons Olive Oil
• ¼ Cup Vidalia Onions, diced
• ¼ Cup Candied Garlic, minced
• ¼ Cup Green Onions, chopped
• 1 pound Louisiana Crawfish Tails
• 1 Cup Baby Lima Beans
• 1 Cup Small Butter Beans
• 1 ½ bunches Green Asparagus, blanched cut on bias
• 2 Cups Crawfish Stock
• Salt and Pepper To Taste
• 4 Tablespoons Butter

Method of Preparation:
Prepare all vegetables. In large hot sauté pan, add the olive oil and onions. Sauté until translucent, then add garlic and asparagus tips and continue sauté for about 1 minute. Add beans and deglaze the pan with stock add crawfish reduce heat to medium. Season as necessary with salt and pepper. Incorporate cold butter to thicken sauce.

Presentation:
Ladle 6 ounce portion of crawfish ragout over the grits-Garnish with parsley and green onion.

Yield: 6 portions
