Seafood Pasta

Recipe Provided by the Four Points by Sheraton French Quarter

Ingredients:

• 1 pound dry Penne pasta
• 1 onion, chopped
• 2 cloves of garlic, chopped
• ¼ pound of shrimp
• ¼ pound of oyster
• ¼ pound of crawfish
• 2 ounce baby spinach
• 1 ounce of kalamata olives
• 4 ounce of artichokes heart
• 3 ounces parmesan cheese
• 1 1/2 cups heavy cream
• 5 ounces Dry white wine
• 1 tablespoon lobster base
• 2 tablespoons of olive oil
• 1 big tomato cut in dice
• 4 leaves of fresh basil

Directions:

Bring a large pot of lightly salted water to a boil. Add penne pasta, and cook until Al dente, about 8 minutes; drain.

In a large skillet, brown onion and garlic with olive oil over medium heat.
Add white wine, lobster base, baby spinach, artichoke, kalamata olives, dice tomato and simmer 5 minutes.

Add the cream and all the seafood and let it cook 5 minutes.
Then add the pasta and let it cook 5 more minutes.

Garnish the pasta with the parmesan cheese and fresh basil.

Ingredients for three persons.
